Some dry Aloo Bukhara's are darker (dark brown). This was Yellowish or slightly light coloured. I am not sure why it is so and which one is better. Probably it needs someone with more insight in to drying process and which specifc variety of loo Bukhara gives best results. So I reserve my comments till I find out more.
